Go 60mm. There's no point doing 40mm at all you'll get bored with it - I did.
Mine is down 60mm on 16s and it doesnt rub in the slightest, gets over every speed bump in sight, and easily goes up multistories. So it's not exactly impractical either.

I've always understood powersliding (drifting) to be using the power to keep the car in a controlled slide. Surely in a fwd car the only way the tail can step out is through lift off oversteer or using the handbrake, and the slide cannot be held using the power through the front wheels?

Not sure about that dent, quite a fare size that. The problem you'll have is your sidestrips are unlacquered, so unless you find a bodyshop that still uses solvent based paint they're going to end up looking different to the rest of the rub strips.
