Id try changing the sender or try another dash, the coolant temp is fine, fan kicks in when it should. Its the guage or sensor which is miles out.

The car ran on 2 cyclinders for about 200 miles which wont have helped the bores getting washed. Im glad you have taken this car and are putting it right, I was sick of it by the time I sold it.
