In a word.. Neither.
Windows 7 is just around the corner so I can't see the point in buying either OS at the moment. If you can "get by" for a few months then do that.
Otherwise you'll regret buying an OS only to find a much better OS available shortly after.

(That's absolutely fine for your proposed system. If you want to go down the route of SLI/Crossfire at a later point then you might want to look at a more expensive psu)
Same GPU and CPU as me. They'll be fine.
Only negatives are the PSU and case you've chosen. Invest in a decent PSU rather than just the highest wattage for the cheapest price you can find. Regarding the case it's personal opinion but I'd rather pay extra and get one with decent airflow and...
