2mm would definately increase the insulation performance but I think the increase in perforamnce between 1mm and 2mm will be nothing compared to the initial performance increase from having a 1mm gasket over the stock solution.
I think 1mm would be fine all your trying to eliminate is metal to matal contact. Although if fitment is not impaired with 2mm then I can't see the extra thickness being a bad thing. I suppose it depends on what fits and what people are willing to pay.
After looking a reciepts more closly it seems the catylst could possibly be the original one that came with the car so its done 6 years. From the new cat I have they dont seem particually restictive. I dont know if ill ever get round to changing it for a sports cat.

As a student of engineering I dont see the need for the gasket to be 3mm thick as PTFE would hardly conduct significant heat at much smaller thicknesses as long as no metal parts were touching.
The alarm led flashes and if i lock the car with the door open a long never ending beep comes from the car like a fire alarm. So I assume the alarm is connected.
