The main problem is finding a Mustang engine, I'm led to believe they're quite rare and expensive. Most people use the 4.0 Rover lump, but it's not as brutal.

Stripping your daily driver should only be an easy temporary measure IMO. Unless you go crazy and remove everything there's never going to be an amazing difference, so removing the rear seats for Llandow is all I would do too. Driver ability and a good overall set-up will be key on the day.
