Yes the wheel is sticking out futher but that nearly 15mm out from the offset that the car was designed for!!! The closer you stick to 48.5 the better. 195s do exists and only Pirelli make them they are the same width os standard so no problems at all!!

Oh and according to speedline you will get rubbing on ET35 once it has been lowered more than 20mm

The rolling radius only affect acceleration! It depends really from where you are coming from 15s 16s etc. And to day they ruin handling is not quite right really they do change the way a car handles though. As you say there is less flex in the sidewall cos they sidewall is a lot stiffer...

The best bet would be 215/35R17 which are 582mm in diameter but I made do with 195/40R17 which are 588mm in diameter.
