Indeed, don't give up, but a; be smart about it and b; don't let "maybe's/possibilities" blind you from something that isn't working.
If you start getting very minimal number of clients and the "business" doesn't grow, you're flogging a dead donkey. Cut your losses and move on.

The simple problem is the definition of "detailing". Dealers, as Alex has said, will look upon a car as "detailed" as it has an AutoGlym product on it, or a permaguard/diamond brite covering. This is "done" in their eyes.
I approached three garages (groups) about four years ago. I took with me...
There are quite a few decent cleaners out there lad. You can use some All Purpose Cleaner products, but like you've said, you need to be careful and test on a very inconspicuous area, to test that it's colour fast. There are a few foaming cleaners as well, like AutoSmart BioBrisk which is great...

Claying will be fine, just hard to remould - keep one piece in a warm bowl of water to keep it pliable while using the other piece. Put them both in to start them off.
Polish, depends on the polish. Menz polishes are best in cold conditions and some may not break down as easily. Again, keeping...
