I'm fairly sure you'll be over tightening them if you are just using a wheel wrench, hence making it harder to undo next time. Torque them up to the proper amount (about 120nm?) and they will a) be safe and 2) come undone fairly...

Like I say, with the engine out and on a stand it should be simple enough. There is a guide on here somewhere that gives the procedure and torque settings. I'm sure someone will come along and link it.
Powder coat is only baked at about 200 degrees isn't it? Hardly going to do any damage to the wheels at that temperature.

Have you ever changed a floating pulley setup before? If not, then I wouldn't attempt it to be honest. For the sake of an extra couple of hundred quid you get the peace of mind that it's done right.
