I would personally bin them, safety first man. The contact patch of a tire is small, so every square mm2 counts. Tyres need to be used regularly to remain supple
Also, its a good idea to change the brake nipples to stainless versions if you have the mild steel versions.

You are fine, 25Nm is a proper torque for plugs. I always handtighten them without overpowering, so they cant break. If you overtorque, they will break and you will be in trouble.
Almost created a new thread and found this one. So if I read correctly, this knob must also be pulled off with brute force? There is no screw base or...? I also have the round orb knob in my phase 1.

I also did this, steering is a lot lighter now. I also made a small mess before I found the nipple location haha. Swapping was a matter of minutes though!
