How specifically do you match inlets?

Car  Monaco 172
The sister company of the place I work is a metal machine shop.

If I was to ask them to match my inlets, how specifically would I ask them to do it? Is it an easy enough operation for a skilled machine shop?
 
match them to 0.5mm off the gasket line, got mine done to this and mine worked a treat

I thought they polished inside aswell? Have they just rounded the edges off and lined up the gasket?
 
I think it all depends on the ID to begin with.... Dependant on the quality of the OE Inlets depends on how much you take off as far as I can tell from researching.
