Although I don't get how the one I've linked would work, it'd have to be screwed on the end of a bolt, because of the head.
The one in the pic you've linked I'm guessing the hoop bit swivels so you can get the bolt through.
I've emailed a few people asking if they can do eye bolts with longer thread lengths. Not holding much hope though. Then again the issue would still be strength.
I suppose a way around it would be getting harnesses that bolt in, with just the hole for the bolt to pass through, rather than the clip on type fasteners that use eye bolts.
Edit: Swivel lifting bolts/nuts seem to be the one you shown. They're bloody expensive the ones I can find!
