I think the original race car application of a flat bottomed wheel, was to aid the driver of a quick entry and exit for his legs over the roll cage door bars and under the steering wheel.
I prefer a 'proper' snap off steering wheel over a flat bottomed wheel (ads a bit of security if staying over night and away from the car at a race circuit too).
