Removing helper springs from ASTs?

I'm trying to get more clearance between the top of the wheel and the spring seat.

Are the helper springs required? Without the helper springs there, I think there would be a fair bit more clearance.

What is their function?

The helper springs are there to stop the main spring from dislocating from the spring seats when the dampers are at full droop. I would advise that you don't remove them tbh.
