i thought it removed build up and general crap on the paint surface?

Makes your paint look more or less "factory new" Chris so makes the car shiny too
Go get some and find out for yourself, I did and was well impressed with a bit of "clay"

On well polished paint I have never seen anything other than on other than above the suface contaminents removed, never had it increase shine here.
