Spam email

On certain spam emails why is the text in the body of the mail just gibberish? Does it mean something?

Reason I ask is a guy at work said there is a reason for the random text.

Anyone shed some light
 
A naive attempt to bypass spam filters.

Most spam filters search for a string of key words so the originators now tend to send the actual email as an image and bulk out the text with crap that doesn't set off the spam filter.

That's the idea but in practice it fails miserably.
