Stripping the clio as much as possible but still MOT worthy

Thankfully I've managed to save enough to keep the 182 whilst I go to uni.

I'll be starting to strip the car this week to make it race car and want to be as extreme as possible with no cost involvement at this point. I'm swayed to be slightly cautious though as the car might still need to pass an MOT.

My question is, what do I need to keep on the inside to ensure it can pass an MOT. I've heard I need a heater to demist the windows but I'd ideally like to chuck the climate control out. How much of the dash needs to be kept? Every gram counts

Also what can I loose from the engine bay. There's a load of deadening covering the master cylinder and other stuff which I assume can be lost.

I'm after advice and pictures of road legal strip outs. My goal is to be as light as possible without problems down the line.

I'd love to know specifically what they would be testing if the car is extensively modified. I don't want to have to refit stuff. There are loads of people with stripped road legal track cars on here.
