What should my next handling mod be?

Current Spec / Mods : Cup Suspension, Cooksport Springs, Michelin PS3's, Whiteline Rear ARB, Rear Axle Spacers, Hubcentric Front Spacers, Polybushed Dogbone & Upper Engine Mount

What should I look at next?

Thinking Solid Top Mounts...probably Pure Motorsport ones

Car is used for fast road use, but looking at seriously getting into some track days

  330i. E30 Touring.
Nothing. For road use, you're all good.

I don't like Cooksports on the road TBH. Prolines suit B-roads better for me. If you get into track days, you'll end up with coilovers, but will suffer road wise.

Stop spending money on handling mods the Clio doesn't really need. Spend it on actual track days instead, but substitute the PS3's for track tyres and get some decent front pads.

A spare set of wheels with federal 595r tyres or similar if you are serious about going on track.
PS3`s would be fine if wet,but you will destroy them in the dry.

Interesting, thanks both! Thought there might be a couple of things worth looking at

Brake setup wise, be interested to know what you'd recommended for road use and track?

Thinking Brembo HC Discs, Braided Lines, Decent Fluid, just unsure on the pads

Don't really want anything which will squeal during road use - thinking Ferodo DS2500's front (or maybe Mintex M1144's), and OEM rears?

Remove the shims when you fit them and they'll be alright. I've never had a set squeal.
