Why won't my car reach temperature?

On Saturday up to Bruntingthorpe the temp needle was a little erratic. It kept dropping and rising especially when I put my foot down to overtake someone, yet it never actually stabalised at the point it normally sits at (just over the halfway mark).

Now on journeys it will barely reach the line under the halfway mark.

Is this a problem with the temp sensor, or could it be something else?

Sounds like, and I don't know much about 172's, but sounds like the thermostat isn't closing properly as it should.

Either that or perhaps a temp sensor has gone?

i'm low on coolant and wondered if that would be a problem!! LOL but i didn't want to be dumb and post that!!
