You should be able to hear boost leaking yes but these cars aren't boost monsters and being "French", the odd whine is considered normal so may go un-noticed.
Just don't let them fob you off in to paying for something that they've obviously done. I did it myself on a 3.0 Diesel Espace last week...

Not special but they can be tricky if you've never done one before. The biggest risk on these is damaging the fuel lines/ connections to the HP fuel pump or contamination in to the fuel system.
Yeah, these days the car would be written off rather than repair and replace components and trim panels. I don't know anyone that has actually replaced an SRS Controller after a deployment. The price of them is ridiculous when £35 can have the CCD removed, effectively resetting the unit.
If the airbag is being deployed though that means a trigger line have been "fired" so the ECU will need service/replacement anyway, irregardless of a fuse being inline or not.

It's a REALLY annoying feature on the Clio III called "Selective opening of doors" where only the drivers door will unlock with a single press of the remote key fob. When you have kids, it is the most annoying thing in the world but thankfully it can be removed with CLIP.

It depends on your ability and if you have/are willing to buy the timing tools which will enable you to do the job.
I'd recommend you take the car to someone that actually knows what they're doing though as it'll give you piece of mind.
