You don't need to subscribe to anything for the updates, the discs are your licences.
I'd suggest you start with a clean wiped console as you got it used, just reset it to factory, sign in with your PSN account (which is free to create). Put a disc in and it'll tell you to download etc.
I think the main issue with the game is that there's nothing to do once you've completed it, and it doesn't take that long to complete it.

You should try FM, you could get gamepass for a month to try it cheaply. If you want more of a sim you could get assetto corsa for Xbox too.
I bought a PS5 for GT7 18 months ago, because I was sick of waiting for Forza, but I definitley lean towards Xbox over PS and have done since 360.
I think they aren't really comparable, Forza is more arcade like than GT7. GT7 feels like a more serious racer, and a game you could use to get into...

The physics are just a tad more arcade than GT7 which makes it a way better game for a casual gamer like myself, especially when combined with the xbox pad which is way more ergonomic than the PS.

Hit another annoying bug this evening, having an explore and drove off the end of the map, so it respawned me facing the other direction.
