That metal clip you mentioned - you need to separate it from the black plastic bit for the standard bulbs, make a small cut in it, wrap it around the HID bulb and use that to sit it in place.
As long as they're set up at the correct height yes, you should have it checked when fitting new headlights anyway.
People will tell you that you also need washers/self levelers but from what I gather they're only required to work if fitted, if they're not there they can't test them, similar to...

Nothing too complicated, from memory:
2 or 4 bolts along the bottom of the bumper underneath
2 bolts at the corners where it meets the wings, don't even need to remove the arch liners to get at these as long as you have a ratchet spanner

I'd expect most insurance companies would apply some common sense/decency if your car was stolen from somewhere you were visiting/holidaying and it wasn't in a garage, although on the other hand I think legally they'd still be within their rights to refuse to pay out. Not entirely sure though.
NEVER declare it as in a garage unless it's parked in a garage overnight every single night. If it's sitting on the driveway or on the street overnight and gets stolen, there's a good chance insurance will tell you to f**k off.
The projector lights are H1 fitment for the dipped beam.
As for the Ipod stuff, you need a cable which runs from the headphone jack on your phone/Ipod to the white and red inputs in the dash, not sure the proper name for it but they're available in pretty much every electrical store/Halfords...
Ah right, touch ups usually catch your eye on gloss finishes obviously due to the reflection being different at that spot. No reflection on matt finishes should make it blend in a little more.
About the same as any other. You're still going to see it's been touched up, but you might get away with it more with there being no real finish to the paint.
