Coilovers are the next step if you want less roll. Buy decent ones too, not Raceland or similar. Roll isn't always a bad thing though.

Sounds fair to me. I'd normally budget £80-120 per panel for paint, so seems reasonable.

K-tec exhausts fit all 1*2's iirc. They have a sleeve joint at the cat end which you can extend and shorten as required.
