The steering wheel is on a master spline so the tracking will have to be adjusted to get it central, but personally if its only just off centre leave it.
As you say it drives great so dont mess with it.
Loads of hastle dash out etc, and the engine management system will not know if you have got air con so I would expect the engine to stall on idle with ac on, forget it way to much hastle.
When you got it out, treat ya paint work with amazing glase or diamond bright, adds a lovely shine and is meant to last 3 years, ive done my 172 with it and its great.

Leave the ECU wiring well alone, fry one and it will cost ya around £600 to sort, dont mess with Renault electrics as all the late type renaults have a multiplexed network, on average you will have 3 to 10 different computers in a car and they all talk to each other, cut or short a wrong wire...

The accelerator pedal is a bolt on unit from memory I think the have three 10mm bolts holding them on, they also have an electrical block connector on this unit rather than a cable. Easy to take off and yes you could put alloy pedals over the plastic pedal.
You gearbox sounds like it needs a set of syncro hubs fitted to it, a fairly big job, but a recon box from renault generally works out cheaper than having box repaired, as to you clutch replace that when you have the box done.
The sensors are buggers to get off , they usually rust in, the best thing you can do is remove the wheel and clean the sensor ring with a soft small wire brush to clean any muck out, remove the electrical connector to the sensor and clear out with a bit of penatrating oil, refit all parts...

big ends... when you start your car from cold does it make a deep knocking noise for a few seconds? Also when warm jab the throttle to about 4500 rpm does the engine knock as the revs increase?
If the answer is yes then it sounds like your big ends may have worn out, they are not to bad to do...
