So I should be good for taking the dog out Mon & Tue and a trip down the shops with the fuel light on,

I didn't change a damn thing when I put Eibach Prolines on mine,
7 years later and my standard dampers and top mounts are still going strong
and i've done trackdays with them too.
Next thing is to loosen off the 4 engine mount bolts and try pulling the engine forward,
if that doesn't fix the knock then you might have to start looking elsewhere.
It does sound like the manifold knocking,
loosening the engine mount bolts and pulling the engine forwards is a good shout,
it's worth trying it before you spend anymore money on garage time.
Have you tried rocking the engine with your hand to see if there's any movement?
If there's any play in the mounts you should be able to move it a bit and possibly hear the knock.
Are you sure it's not your suspension top mounts?

I'd say no, even the rubber one leaks from time to time,
so i'd expect the copper crush one's to drip like a leaky tap,
I could be wrong though as i've never used one on the sump.
Could do they're rubber after all, but usually if they're gone the whole engine and box moves and causes the manifold to clunk into it's heatshield,
plus your throttle response won't be as sharp because of all the movement.

A loud clunking when letting the throttle on and off, even at slow speeds,
it's usually the dog bone that's the problem, but doing all three at once is usually best.
Definitely needs to be toned down a bit, the whole point in projects like that is to be a wolf in sheeps clothing,
not all 'look at me i'm a fast car in a van's body', kind of defeats the point.
