Get some WD40 or similar round the plugs & engine block to pentrate the thread. Warm the engine up then do as above. Metal expands when it's hot & is less brittle. Go very easy or you'll be in deep Sh1t. (Copper slip threads on new plugs)

Relitively normal on decatted vehicles. The popping you get is the igniting of the fuel you can vocally hear, before you decatted it the cat would have reduced this. Now you've decatted the system it is more free flowing. If you've noticed no adverse running issues then I wouldn't worry.
