There's a clip on the header tank for the coolant that the cable sits in mate. You can use that to position the cable. You'll see what I mean when you look.
Rhys is rather correct, I had the exact same symptoms. Likely someone has fitted 10mm balljoints as they are listed as a part (but are 2mm too small)
You can stop the knock for a day or three just by getting under it and doing up the bolts that connect it to the wishbone tighter, they will have...

Awesome progress, I love how you've actually started from nothing with this, and the fact you're bothering to photo and write about everything.
Makes for great reading and probably (imo) the most interesting project on here.

The headlights just take a very fine paper, maybe a few grades if they're bad, say 1200, 1500, 2000... then a polish up with a half decent polish.
I made mine look half decent with scratch x and a drill bit attachment, then some SRP.
