I doubt it'll be the brake pedal switch if its braking the car, all that does is chucks the esp, abs and serv lights on. Has no effect on the running of the car other you've got no abs once it trips.
No but the ESP has the option to brake wheels itself, where abouts are you based? It needs to go on clip really first to check otherwise it'll just be trial by replacement which will get expensive. The fact that it happens on turning the wheel makes me think steering angle sensor but need to be...

Yeh they are kept and best left well alone. I'd be semi-careful where you take it for new tyres too as they need to take the tyres of the rims in a specific way avoiding the sensor, although i've found a lot of places get scared and run a mile where tyre pressure sensors are mentioned.

Calipers mount like so instead of the back like a normal sliding setup. So as long as you can adapt from this they should fit, believe theres already a kit for mk2s.
Hubs are totally different as they are bolt through calipers, should be simple enough with an adapter plate made up and suitable size disks. Seeing as cooking model is 4 stud and 197/200 5-stud.
