Depends if you don't mind spending the money, you could either: Get a quality oil like Fuchs Titan and replace every 6 months. or Use the oem Elf Evolution 900 SXR and replace after every track day or two.

The Camera Raw Plugin doesn't support your particular RAW file from your camera. You need to update it from the Adobe website. The site will list what camera models it supports, you just need to make sure yours is on the list. I've had it before with Photoshop. Is it a new ish Canon you've got?

The main risk is the fact that you're fixed in the upright position, so if you were to roll it and the roof came in on your head, you won't be able to move where as a seatbelt you can move around a bit. Very unlikely to roll it, but you never know.

Sensor 2 is after the cat. They don't affect the running of the car though, just an emissions warning. Sensor 1 controls the running of the car fueling wise. Maybe your cat is on it's way out.

Pressing the button switches it off permanently until you either press it again or turn the car off and on. Will that not work?

Judder on the Ferodo pads is common, it's uneven pad deposits on the discs. That's why I switched to CL's.
