That'll have the older style plates in then still mate, so the noise is part and parcel of a gripper I'm afraid. The newer plates have oil grooves in them to allow a small amount of lubrication to stop the creaking/clunking at slow speeds.

Redline MTL is what I've run in a Quaife diffed/Quaife straight cut gearbox before and it worked extremely well. Yeah, quaifes ain't a plate diff, but it showed no signs of wear in the box after a full season of 400+bhp/lbft abuse and I used to knock the s**t out of it too.
Don't put it in the box is my advice. It'll f**k the synchros or gear dog teeth, if not both mate. The castrol B373 is too slippery for them from what I've seen of the jc5's that have run on it.

With the 1000's I've ridden you need to be climbing all over the tank to keep the front wheel down if your giving it anything over a qtr of a turn of throttle. Lol! The S1000's are quite user friendly though from what I'm seeing. Different modes for power delivery etc.

Difficult to say which i'd get the most use out of tbh mate. Both the car and the bike are a very focussed bit of machinery. In a perfect world I'd have both. Lol!
