To get around the iPod connection, I went for an Alpine unit with "blackout" so it doesn't glare all the time, a lead to keep the stalks and dash-top dsiplay working and a specific iPod...

If I need to flash someone it works fine with Auto on.
And it means I am approximately 0.5% lazier when driving. Almost a full 1% if Auto-wipers are set too.

No, the second car would be a track car. Last time I looked you didn't need tax or MOT and insurance will be however much you go tracking.
why build a 1/2-baked "fast road" machine when you can't use the benefit if it. Just get a track car and spend as many weekends as possible really pressing on.
If you can better a better handset without having to up your tariff then take it, just that Salsa, Wildfire & Cha Cha are a bit... well....... they're not that great.
