I've seen one for £2500 but my budget is £2000. I know I'll get one for that as I've seen a few low milers go for around £1700-1800 in the last few weeks just nothing near to where I am.

No one is suggesting that you should. It's just seems that for something as specific as what you're looking for, you may need to either a) broaden your horizons a little and search further afield, or b) up your budget.
Everyone's giving you advice but your not taking it.
A good condition 172 will be priced over £2000.

The for sale section here is good; buying cars from forums tends to be a good things as it's easier to track the history.
If you were willing to compromise on colour, there is a lovely Flame Red one for sale currently on here for a smidge over £2k.
