Draining and refilling radiator...

Just the radiator? Or entire cooling system?

Undue the bleed screws and the bottom radiator hose.

I wanna get all the coolant out and get it changed for nice fresh stuff. The bleed screws are for getting the stuff out that the hoses migh tnot let out yes?

No the bleed screw allows air into the sytem so the water can come out, bit like holding your finger over the end of a straw after dipping it into a drink.

Need to undue the bleed screw when fillling to.
 
If it's as simple as a Mk1...

Undo the bottom hose into/out of the radiator.
Pull it away from the rad so all the fluid pisses out everywhere, preferably into a bucket as you're not supposed to let it go into the drains.
When it stops coming out, refit the pipe and top up the system from the header tank, using the correct coolant at the correct mixture (if you don't get the premixed stuff).
When it's up to the top mark, start the car with the bleed screw out of the top of the rad and the header tank cap off.
When just coolant (and no air) comes out of the bleed screw hole, do it up again and put the top back on the header tank.

Should then be job done...

You will obviously need to top the water up again once and probably when it is bleeding to stop air being drawn into the system.
