My engine is running on after turning it off. Checked for vacuum leaks and engine temp is normal so I'm going to try some Winns/STP/Redex treatment to try decoking first. If that doesn't work are there any sensors that could cause this issue?

Lol ssshhh, ive only ever seen this on an old carb'd pugeot, that would almost die when the ignition turned off and then fire back into life lol!
So please tell me what im so obviously missing

it's basically dieseling, in very simple terms. On old cars with an adjustable dizzy you'd see running on if the timing wasn't set right (too retarded IIRC, it's been a long time since i fiddled with dizzy timing) if you're letting air in, it will feed the remnants of the burn, so it runs on
