if i buy a new stereo for my clio will i still be able to use the stalk on the steering wheel to control the volume, track number etc?

Yep, but you'll need and adapter such as the one caraudiodirect do.

depends on the stereo mate some stereo you cant buy adapters for

If its Alpine yes m8 as ive just had mine fitted and its mint

If you look on the back of the head unit, if there is a small blue port, an adapter will fit into that and you will still be able yo use the stalk.

There you go mate, the steering controls work seriously well, to light up the display you just need the Alpine adapter which is a splitter for the display cant rememeber the part no at the mo, but they give u an idea
