Temperature Problems 1.2 16v

Been noticing a few little problems with the temperature in my car lately, It never seems to want to heat up.. After a 52 mile drive the temp gauge was reading about 2 bars below where it should be and it is also using a lot of water / coolant. I don't know if it would be related in any way or not but it also reads about 29 degrees outside..
Anyone know anything I should look out for or change? I haven't driven the car in about 3 months as I moved to London and only drive when I'm home..
