I'm behind the times with this but just got the kindle app. Love reading so this means I can without having to stack up loads of books :)

UrbanSpoon - Finds restaurants near you.
Flickster - For cinema listings.
Skype - Handy as fook if your mates are on it.

Apps I'm finding useful other than the usual facebook/twitter etc:

iStudiez Pro: Scholarly calendar with ability to input assignments/classes etc with reminders, tutor address book with email.
Remote: Control iTunes wirelessly
Teamviewer: Control computer wirelessly
Photobucket
7.0 MPX camera: Apparently when viewed after on a pc you notice the difference, I have to say it works, to a degree.
Argos: I work for them....and thus spend all my wages haha
Vouchercloud: Vouchers/Offers
Dominos
Orange Weds
eBay
Shopping: Compare prices
TrueLad....Lol.
Angry Birds
Yell
BBC News
Sky Sports
MyCarCheck
thetrainline
Opera Mini: Opera browser, I find it better than Safari
Traffic Info or HA Traffic
AutoTrader
Fuel Calc Lite
Sudoku

I don't rate tapatalk, safari is much easier for me.

Puzzle/logic game.

You have to move blocks/barrels to cover this little orange before a big nasty rain cloud comes along and kills him.

It's great.

Tapatalk is frustrating. Very easy to use, but crashes all the time.
I use it daily, and mine crashes most days too. I find it only does it when changing between pages, while it's trying to auto-scroll to the bottom.

Where's Wally in Hollywood.

Epic game. 59p. Ignore the comments, they've fixed the bugs now.

Great game, get it whilst its free.

Cover Orange. As pointed out by Revels for the iPhone apps. This is the iPad version though, it's currently 59p.
