The key to Black is a damn good polish to restore gloss and remove any defects. The polishing stage creates 90% of the overall looks.
Personally my chosen routes on my old Clio where:
Wash - Duragloss 901
Clay - Anything non agressive
Machine Polish as needed with Menzerna Intensive Polish...
Sonax Gloss Shampoo is a damn nice wash, I used to be able to get it cheap from Vauxhall, but my local dealer no longer stocks it so I have gone over to Duragloss saving the small amounts of Sonax I have left for best.

No chips away place will touch in things on bonnets, mainly as there crap repairs will look even worse than normal, so as a rule they wont do them. It is impossible to blend them in up there as it is so in your face. So a touch up pen and sand is the only way apart from a re-spray.

Not many out there I prefer but have gone over to others as I can't get the Clearkote in Gallon sizes anymore for reasonable money, so just use the small bottle I have on my glass.
Always try the mildest combo first, but it is going to be hard paint. At minimum it is going to need something Menzerna Intensive Polish - I would try that before wet sanding it.
P21s looks good on silver but is not that durable. But over AJT that is not an issue.
Aside from Werksatt the only sealant that will look better on silver IMO is Zaino Z2.
I would stick with the process you have and replace the Collinite with Victoria Concours (looks nearly as good as...

Personally I feel the Black Gold ever looked better with Clearkote 15 quids worth of wax compared something which costs hundreds!
It will strip off any products you have on the paint that may be masking any defects - you will be left with clean bare paint in it's true state. If you have lots of coats of wax on there it will probably look worse.
Not used it without a sealant under it, but I am running one coat of it over a coats of Werkstatt Acylic and that is holding up well with nothing than the odd wash and maybe a spritz of AG Aquawax since October.
