You only need to be worry about the small hole (1mm). You can plug it to close it off.
Jenvey ones are good but expensive but 60mm is too short to make decent torque. You'll need at least 90mm iirc.
Personally, IMO, if you can do all your own maintenance and use the car very competitively and want a lower FD then the gripper sounds the baby for you.
If you want a fit and forget, use the car on the road as well as track, are happy with the gearing of your box and accept you might lose some...

I know loads in the Subaru world with forged pistons lasting way longer than 20k but haven't checked the silicone content I must admit.
All sti Subaru's had forged pistons up to V6 I recently found out.

Spending a few grand on a standard engine seems daft to me. you could have many second hand engines for that.
I would get one with decent history and take the chance. Of course, its up to you but that's my opinion.
This is what I did. Piece of 50mm flat bar with 3 holes to mount it to the car, 2 holes for the pedal dowels to locate to on the plate and 1 taped hole to fix the pedal to the plate.
Unfortunately I sold it with the pedal when I no longer needed it.
