I assume the average trackday driver doesn't need adjustable suspension, sticky tires, bucket seats etc aswell, as his driving is so poor that he will never ever improve his tuition to a level where the car is the limiting factor?

A soldered connection is just as good as the person's soldering skills are. Heat shrinked (watersealed) crimp connectors are the way forward!
For the joints i would use some automotive spec AMP connectors (econoseal etc.).

To Lock the car: keep passenger door open, hit the locking button in the car, get out through open passenger door, close and lock passenger door, Done!
There should be 2 connectors in the fusebox and you can disconnect the remaining wires from the main fuses aswell (take a photo of the fuse's positions for reassembly). Then there should be 2 wires from the alarm system soldered to the loom which you need to cut off.
Over revving is not hitting the limiter. Over-revving is forcing the engine to over-rev by selecting the wrong (low) gear.
Dephaser pulley has a reason tbh. It's got something to do with emissions and idle but further explanations will be to complicated for you.
