i think you've got lost in some alternate reality where people drive racing cars on the road, and are prepared to actually part with far more money than they need to. FFS i've seen people penny pinch and not run a lambda at all just to save a few...
dont bother with EBC disks or pads, the discs will have no grooves left in no time at all, and the pads will fall to pieces.
Standard disks from a reasonable quality manufacturer (ATE, Brembo, QH, etc) and some Mintex 1144 pads, and you should have lots of feel back
the second lambda doesn't change anything, it's basically a warning to tell you if the cat is faulty. if you want the light to go out, you can remove the sensor from the exhaust, but leave it plugged in so it's only seeing clean air. you will need a blank to replace where the sensor was screwed in.
Wideband sensors are £60-£100 these days, they're normally the same sensor used as OEM on VAG vehicles and others, so they're quite accessable. Wideband reading/monitoring/logging equipment is around £300-£500. Where the hell has £1k come from? Price is no indication of suitability for the job...

My personal view is that there' no discernable difference until you get to highly modded. I've also seen the collector get incredibly hot (glowing on the verge of transparent) on the 172 variant, so it's my belief the 182 manifold helps keep EGTs lower. That brings benefits in itself.
are you using a flat piece of perspex with 2 holes drilled, and some grease on the head face to make a seal? brake cleaner or de-greaser is good to use.
if you need wideband control, the mapping is wrong. Narrowband on omex can make 30% changes in either direction if needed, and narrowband is actually faster to react in driving so is the right thing to use. The Omex 710 wil do fully sequential fuel and ignition, however, the 1*2 has a wasted...
