Join straight onto the cut cables with an uninsulated crimp and cover with dual wall heatshrink. Ideally you want a hydraulic crimper and ferrule to suit, about £30 off ebay.
Id also consider wiring the epas ecu up to the car properly instead of the potentiometer setup, as it does not work right and feels awful.

Its awful with the potentiometer setup though mate. Crap assistance at low speed then you will be forever adjusting it when at speed. It feels decent now wired up right, difference is night and day.
