Only thing I have done is jack the car up to fit a back box. Started car while still of the ground to check exhaust seal - all fine.
Got it back on the ground and started it, idle really high and hunting about

Went for a run up the road to see if it would clear but no difference

The 3k rpm idle is what you get when air is leaking into the inlet manifold, it happened to me when I forgot to plug something back in once.

This might seem like a random question but does it settle down to normal if you hold your foot on the brake?

Mine did this recently, took the battery off for half hour or so, disconnected the accelerator pedal and removed and lubed the throttle body and cured ;)

Solved, air leak between upper and lower manifolds. Caused by some MAD dress up bolts. They are too long even with washers so when you tighten then up they press on lower manifold
