it'll probably be around 90-100degC at a guess, techically you should prime the cooler first if you can ( bit of a pain in the arse to do if its mounted the with the inlet/outlet facing down)

fill the cooler with oil first

then i connected one side of the lines up to plate, then poured some oil down the other line before connecting

then run up to temp, cool down ect and top up as nessacery

thats what i done any way

make sure you do the connectors up tight as its a tight space to try re tighten things ect

Pretty sure the inbuilt thermostat on the mocal sandwich plate opens at 80degC:)

the stock stat in a mocal plate is 80 degrees. I replaced it with a 100degree one on my 200sx as I had a pretty large cooler and didn't want to stop the oil warming properly.

You'll always get oil flow into the cooler, it's just a restriction that stops over cooling. The stat is never completely closed.
