What springs are you getting? Some are matched to the same make of dampers but you can usually put them with whatever dampers you buy.
How hard do you want the ride to be? Coilovers appear to be the stiffest ride, Konis not quite so bad.

edit: To check the dampers,bounce each corner of the car - it should stop after one compression. If its like a 60s american cruiser then theyre fooked lol
Also, if you do the dampers at the same time as the springs, perhaps consider getting the bushes renewed at the same time as well - its all in bits already so youll save a couple of hours labour and it will tighten up the handling as well! Might as well do the whole job while youve got it apart.
