I am correct in thinking that I will only need 5 litres of oil to do the change?

You don't need the full 5 liters 4.1 I think is what you need.

I'm sure its 5.1 for a 172. Mine takes a whole 5 litres and still wants ore

Its supposed to be 5.1 litres with a new oil filter , 4.75 litres if you don't change the oil filter . Just top up to the max mark on your disptick .
