Removing ESP from 182 FF

Hi Guys ive bought a cheap 182 full fat that needed some work with the mindset of turning it into a road legal track car. Am i right in thinking then the ESP is turned off it switches back on above 50mph? I am sure i have seen some where it can be reprogramed to come back on alot later, or am i going mad?? If so what software do i need? Thanks.

Ah sweet thats good i could imaging setting myself up for a corner and it punting me off in a different direction! lol

I didn't find it did that when I ran 182 FF on and off track when I left it on but I did prefer it off.
