With the water feature still in effect in the car, i can only now put it down to a leak, so with that, the carpets and seats are coming out on sunday..
Is the centre plastic easy enough to remove? (by the hand brake.)

an yeah the plastic by the handbrake is held on by 2 star drive screws

Yeh its all easy to get out, wheres getting wet? Check the skuttle drains for a start if its the front, wants to all come out anyway to get it properly dry so it won't smell tbh.
