It's a mix mate.

The icons are "Matte nano", lock screens called "zacs lock screen 2" and the status bars called "wave status bar".

Download ICONOCLASM, you can have all sorts of icon arrangements with that...

Some themes wallpapers can't be overridden by just checking user wallpaper in winterboard. Only way I know is to use iFile, iphonebrowser or ssh. Goto var/stash/theme then delete the wallpaper.png from the theme concerned, then when you go back into winterboard and respring, it will go back to default wallpaper you have chosen. Pretty easy when you've done it a few times.
