Maybe try just getting the headunit working first without the stalk adaptors, then you'll know if its the headunit or stalk adaptors that are messing it up? When you say its not remembering the settings, do you mean when you turn the ignition off?

Another option, maybe if on the carbon vinyl'd ones you went over the letters in silver paint. So it looks like your old ones, but with carbon background instead of anthracite? Although with the texture painting directly over the top probably would be hard!

Also, I'm pretty sure the connector with the wires you pulled out, is the one that connects it to the dash display/stalk. With your new headunit you won't plug this in as its specifically for the Renault Headunit, so it won't be needed. unless you've bought the stalk/display adaptors. The one...

lol, make sure you check the right fitment in the description! If you go for system A, I got extended bolts from EuroPerformance.

Remember the sizes are for total width, so 40mm spacers are 2 x 20mm each side (just in case lol)

I've got FK Automotive Hubcentric spacers. If your getting larger spacers, get system B spacers that bolt to the hub first, then your original bolts bolt the wheels to the spacer. The other option is system A Hubcentrics, which still have the lip, but require longer bolts as the don't bolt to...

Doubt you'll have any problems with heat issues mounting it in there, as people mount them underneath seats and false floors. As long as you don't seal it in lol.

Depends. If there are rear speakers fitted, they will be the same size as the fronts. You'll have to check yours though not all models came with rear speakers. As to tweeters, I don't know if ph1 have tweeters? I think they do, they'd be in the dash either side.

The Mk2 Ph1 standard door speakers are 5.25" (13cm). Re. Steering controls, most main manufacturers will work. You have to buy the adaptors seperately, First the steering control module thing itself, then the adaptor that adapts that to your make of headunit. So brands like Sony/Alpine etc...

If your just looking for a quick solution, I'd use a touch up pen of the same colour code as your alloys were refurbed in. Will mask it at least.
