I would expect the clio to have the legs on you regardless but it also helps he will power understeer when cocking up so its easier to get on the limit.
My AE86 has a 2 way plate diff. Its pretty awesome. Set up right its just as useful as a FWD car.

You should match the throttlebodies to the engine spec. What cams, compression, headwork, exhaust etc etc. Its not a bolt-on-gain-x-bhp type of modification.
J Hook and other grooved styles basically increase the wear rate slightly of the pad. This means it sweeps the surface layer off quicker and if you over heat pads and glase them; then it can recover the pads to regain pedal feel.
On a road car they can add a little more noise to the braking but...
I have the 328i. Its a lovely car to drive. I'm probably doing 34 mpg with crappy town driving but on a long cruise its into the 40's.
Needs super to get the best mpg but its still cheaper than a diesel. In sports mode it goes like a scolded cat.

Cant say I can tell the difference by the seat of my pants with Shell V-Power and Tesco Momentum. Tesco is so much cheaper though.
Tried some asda 95 as it was an emergency fill up. Probably 5mpg worse.

Its normal. They are not gas filled so there is no pressure to push the piston out.
You will notice that when you buy them they do not have a retaining wire to hold the shaft in position.

The problem you have that many don't is your car is stripped and the rear lighter than standard. With a fixed suspension setup, removing weight raises the car. As most of the weight you've removed is from the centre and rear then this is where the greatest effect is. Outside of competition it...

Old cars have nothing to prove, but will give the best driver feedback and reward you the most. Sell yourself to your mates as being the slowest car there. If you are faster than others you can rib them down the pub but trackdays are about fun - not fast.
The pads are sintered metal so quite possibly stuck to the disc when in storage. I cant see any evidence in that image they rusted internally but a years worth of use is pretty good considering the caliper.

The benefit of the ARB is it will help increase the rear roll stiffness. I wouldnt go for the 21mm one unless the car was on slicks.
I would factor in a PMS rear ARB - 19mm should suffice

The pads will have to bed in to the shape of the new discs so it really depends on how worn the old discs were but kyle is right on the best method to use.
Mintex M1144 I'd say. The calipers and pads on the Clio are small enough to heat up nice and fast.

Sounds a good setup to me. The Bilstein are firm but thats significantly countered with how good and how they react better to small bumps compared to the original twin tube.

The Clio 3 has a large bearing so generally last a few years. Two years is probably a reasonably good life if the car is regularly driven, driven hard and/or found a good few poor condition roads.
